Pesto Shrimp Lasagna

  • 1 package of lasagna noodles
  • 7-8 oz pesto
  • 1 cup olive oil
  • 2 cup shredded parmesan cheese
  • 2 cups ricotta
  • 3 cloves finely shredded or pressed garlic
  • 1 lb. baby shrimp, chopped
  1. Cook pasta according to package instructions.
  2. Preheat the oven to 375F.
  3. Grab a casserole dish and wipe it down with a little olive oil.
  4. Combine the olive oil and pesto (to stretch it a bit).
  5. Combine shredded garlic and ricotta.
  6. Place the first layer of lasagna noodles down.
  7. Paint with the pesto mixture, top with shrimp and then spoonfuls of riccota.
  8. Sprinkle Parmesan.
  9. Repeat, repeat, repeat.
  10. After sprinkling the final layer with Parmesan, Drizzle the remaining pesto on top.
  11. Bake in oven for 35 minutes.
