Roasted Tomato Soup

  • 8 Roma tomatoes
  • 1 cup chopped yellow or white onion
  • 2 tbsp. olive oil
  • salt and pepper to taste
  • 2 tsp. italian seasonings
  • 3 crushed garlic cloves
  • 1 cup veggie stock
  • 1 can of tomato paste (6 oz.)
  • 2½ cups water
  1. Clean the tomatoes.
  2. Toss them in olive oil and salt.
  3. Lay them down on a parchment lined baking sheet.
  4. Roast them in the oven at 300F for 15 minutes, flip and return to the oven for another 15-20 minutes.
  5. Remove the tomatoes from the oven and add to a pot with chopped onion, garlic and a tbsp. of olive oil.
  6. Saute for a few minutes stirring frequently.
  7. Allow the tomatoes to cool a little before adding to the food processor or blender.
  8. Puree the tomatoes, stock, paste, seasoning, salt, and water.
  9. Heat on stove for 15 minutes over medium heat, stirring occasionally.
  10. Garnish with basil or parsley and serve.
