Christmas Cookies AKA Mexican Wedding Cookies

  • 1 stick softened butter
  • 2 tbsp. confectioner’s sugar
  • 1 tbsp. vanilla
  • ½ cup chopped walnuts
  • 1 cup flour
  • Extra confectioner’s sugar for topping
  1. Preheat the oven to 350F.
  2. Cream together butter and sugar until soft.
  3. Mix in the vanilla and nuts; then gradually add the flour.
  4. Shape into small balls (smaller than a scoop of ice cream, bigger than a tbsp.
  5. Bake on ungreased cookie sheet for 12-15 minutes
  6. Cool for five minutes.
  7. Shake cookies in a bag of confectioner’s sugar.
  8. Set aside until completely cooled.
  9. Once cooled, roll again into confectioner’s sugar.
