Crispy Veggie & Potato Cake

We're in the midst of a very strict diet of fruits, veggies, nuts and olive oil. After eating soups and salads for the last 4 days, I came up with this recipe for something different with texture!
Ingredients
2 small russet potatoes, washed
¼ green pepper, chopped
¼ onion, chopped
2 tbsp. olive oil
salt and pepper
Instructions
Shred the potatoes.
Combine the potatoes with the onion and pepper.
Salt and pepper the ingredients to your liking.
Compact the ingredients into a ball and flatten.
Fry both sides until deep golden brown on both sides.
We topped with guacamole and salsa.
