Salmon Avocado Burger

Living on the New England shoreline, we've always got freshly caught fish/shellfish in our markets. We had some leftover Atlantic salmon in the fridge, so I decided to whip up a nice burger. It was so good, so good, so good with the avocado slathered on top! You can use canned salmon if you're in to that sort of thing. ;)
  • approx. 1.5 cups of chilled (previously cooked/grilled) salmon, crumbled
  • 1/4 red onion, finely diced
  • 1/2 red pepper, finely diced
  • 1 tsp. dill
  • juice from one lemon
  • 3 egg whites
  • sea salt to taste
  • 1 tbsp. olive oil
  • 1 handful of fresh spinach leaves
  • 2 tbsp. flour
  • 2 rolls or hamburger style buns
  • Topping:
  • I used guacamole, but here's an easy alternative:
  • 1/2 an avocado
  • 1 tbsp. lemon juice
  • 1 tbsp. red onion
  • sea salt to taste
  1. Mix the crumbled salmon, onion, red pepper, dill, lemon juice, egg whites, and flour in a large bowl.
  2. Season with salt and pepper.
  3. Use your hands to shape two burgers.
  4. Heat a large grill pan or non-stick pan over medium heat and add oil.
  5. Cook the burgers for 3-4 minutes on each side until browned and crisp on the edges and heated all the way through.
  6. While burger is cooking, toast the roll/bun and layer the bottom half with spinach. Place cooked salmon burger on top then top with avocado spread/guacamole.
