This pasta dish is flavorful and relatively healthy. Add chicken or shrimp! Ready in 20 minutes or less!
- 1 package dry fettuccine
- 2 red bell peppers, sliced
- 1/2 yellow onion, sliced
- 3 cloves garlic, minced
- 1/2 tsp. cayenne pepper
- 1/2 cup chicken broth
- 1 cup sour cream (reduced fat)
- 3/4 cup grated Parmesan
- s + p to taste
- Cook pasta in lightly salted water until al dente and drain.
- While pasta is cooking, bring large skillet, lightly greased with cooking oil, to medium heat and add garlic, red peppers, onion, and cayenne pepper. Cook for about 4-5 minutes
- Stir in chicken broth and sour cream and simmer until sauce is your desired thickness. Stir in cheese and add salt and pepper towards end.
- Toss with fettuccine and plate!
