This traditional Italian dish is full of fresh flavors and is perfect for a quick dinner or side. Serves 4-6.
- 1 lb. cherry tomatoes, sliced in quarters
- 1 lb. gnocchi, cooked according to packaging
- 1 cup arugula, chopped
- 1/2 cup shredded parmesan
- 1/4 cup olive oil
- 3 tbsp. basil, chopped
- 1 tsp. reduced balsamicĀ vinaigrette
- 1 tsp. sea salt
- 1-2 garlic cloves, minced
- Mix all ingredients in large bowl and allow flavors to meld for 30-45 minutes before serving.
- Garnish with a bit of fresh basil.
