Exotic and very simple appetizer. You will need a grill or grill pan, and brush for oil. Serves 4.
- 12-16 grape leaves, packed in brine
- 8 oz. package of solid feta cheese, cut in approx. 1″ squares
- 1/4 cup olive oil (the good stuff)
- Preheat grill.
- Unroll grape leaves and rinse with water.
- Boil and blanch grape leaves 2-3 minutes each.
- Transfer to bowl with cold water.
- Drain and pat dry. Set leaves aside.
- Vein side up, snip off stem with scissors.
- Pace feta on center of leaf and fold sides tightly.
- Skewer through the center.
- Brush with olive oil.
- Grill for 3-5 minutes turning often.
- Serve hot!
