Healthy soup for the soul! 6 servings.
- 1 cooked rotisserie chicken from local market
- 2 sprigs of fresh rosemary finely chopped
- 3 celery stalks chopped
- 1 potato diced into small cubes
- 1 medium red pepper chopped
- 1 small red onion chopped
- 3 cloves garlic minced
- 3 cans chicken broth (low sodium for lighter broth)
- 1 cup pasta of your choice (use what you have)
- 1 tbsp olive oil
- sea salt & pepper
- In a large skillet, add oil, s+ p, onion, potato, red pepper and garlic. Saute over medium heat for five minutes, stirring occasionally.
- Shred chicken meat to desired size and add to pan. Heat for 2 minutes.
- Add chicken broth and rosemary to pan and reduce heat to low. Allow to simmer for approx. 20 minutes.
- Final step, add pasta and heat for additional 5 minutes or until noodles are soft enough.
