This is such a simple recipe that goes well with so many dishes! Serves 4.
- 1 1/2 lbs small red potatoes, cut in half
- 2 tsp. thyme
- 1 tsp. black pepper
- 1 tsp. sea salt
- 1/4 cup oil
- Par cook the potatoes in a pot of boiling water for 10 minutes.
- Remove potatoes from water, drain, and pat dry.
- Heat oil in pan over medium high heat.
- Once the oil has risen in temperature, add potatoes and begin sprinkling with spices and salt.
- Once the potatoes are crispy, remove and place on a plate with several paper towels to remove excess oil.
