Soups are so fun and satisfying to make when they’re easy to prepare and ingredients aren’t hard to come by! Serves 4.
- 1 package fresh tortellini
- 1 14oz. can whole tomatoes, chopped
- 10 oz. fresh spinach, stems removed
- 1 tbsp. olive oil
- 5 cups chicken broth
- 1 garlic clove, minced
- 1/2 cup onion, finely chopped
- salt and pepper to taste
- Parmesan to top
- In a large pot, heat the olive oil over medium heat.
- Saute the garlic and onion for about 5 minutes, stirring frequently.
- Add broth and tomatoes, raise heat to high, and boil.
- Add the tortellini and cook, timed according to tortellini packaging.
- Add the spinach, salt and pepper about 1 1/2 minutes before tortellini is done.
- Serve hot and sprinkle with Parmesan.
