Hearty Italian style salad low fat, low cal, just plain healthy! Serves 6!
- 2 bunches of broccoli
- 2 cups shredded carrots
- 1/4 cup extra virgin olive oil
- 1/2 tsp. chili powder
- 1/2 cup lemon juice
- sea salt and pepper to taste
- Soak chopped broccoli in cold water for 30 minutes.
- Par cook the broccoli for 3 minutes in boiling water.
- Remove the broccoli and place in cold water bath with carrots.
- Drain and place in serving bowl.
- Pour lemon juice, salt, pepper, chili powder over the top and stir.
- Serve chilled.
