This salad is super low cal, delicious and filling! Serves 2.
- 1 cup shredded carrots
- 1 cup shredded jicama
- 1 cup spinach
- 10-15 chopped black olives
- 2 tbsp. sunflower seeds
- Mix all ingredients in a bowl and add your favorite salad dressing.

- 1 clove garlic, minced
- juice from one lemon
- 1 tsp. lemon zest
- 1tbsp. water
