Semi-Homemade, quick and simple black bean soup. Serves 2.
Ingredients:
- 1 can, strained black beans and 1/2 can water
- 1/4 cup half and half or cream
- 1/4 cup spicy or mild salsa of your choice
- 2 tbsp. sour cream
- 2 tbsp. extra salsa
Directions:
- Puree beans and salsa in food processor until smooth.
- Heat mixture over medium, add cream, stir well.
- Serve immediately or store in the refrigerator.
*Garnish with a dollop of sour cream as well as a dollop of salsa.
