Ingredients:
- 1/4 cup orzo
- 1 tbsp. olive oil
- 1 cup long white rice
- 2 cups chicken or veggie stock
- 2 cups arugula
- 1/4 cup feta cheese crumbles
Directions:
- Heat olive oil and orzo in a skillet until you get a nice golden finish to the orzo.
- Add the rice and stock and stir.
- Bring to a boil, cover and reduce to simmer until the rice is tender.
- Add arugula and feta, give it a stir.
- Serve!
