Do you need something quick and easy to whip up for an afternoon snack? Serves 4-6!
- 1 dozen corn tortillas
- 1 cup corn (leftovers or canned, whatever)
- 1 package shredded jack or pepper jack cheese
- 1 cup sliced veggie of your choice (use what you have, I like peppers)
- Heat skillet over medium heat.
- Arrange tortillas on surface.
- Stuff with cheese and veggies.
- Fold in half.
- Flip after one minute.
- Cook an additional minute. Serve!
