Traditional Tamale Pie recipe.
Ingredients:
- 1.5 tubes of polenta
- Olive oil cooking spray
- 2 cans of chili
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/2 cup lite sour cream
- 1 green onion, chopped for garnish
Directions:
- Preheat the oven to 450F.
- Crumble the polenta and place in a medium sized oiled baking dish (approx 11×7).
- Top the polenta with chili.
- Top the chili with cheese.
- Bake for approx. 15 minutes.
- Dollop with sour cream and salsa, plus a dash of green onion.
