Spiced Pumpkin Bars

These cute little pumpkin bars are perfect for fall and winter time treats!


  • 2 cups all-purpose flour
  • 2 1/4 tsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 cup granulated sugar
  • 1/3 cup butter, softened
  • 1/2 cup firmly packed brown sugar
  • 2 large eggs
  • 2 large egg whites
  • 1 can (15 oz.) pumpkin
  • 1 cup carrots, finely shredded
  • 1/4 cup cream cheese
  • 1/4  cup sugar
  • 2 tbsp. water
  • 2 tsp. lemon juice


  1. Preheat oven to 350°F.
  2. Grease 13×9 pan.
  3. Combine flour, pumpkin pie spice, baking powder and baking soda in small bowl.
  4. Beat sugar, butter and brown sugar in large mixer bowl until crumbly.
  5. Add the eggs, egg whites, pumpkin and carrot; beat until well blended.
  6. Add crumbly mixture; stir well.
  7. Spread into prepared pan.
  8. Combine softened cream cheese , 1/4 cup granulated sugar, water and lemon in small mixer bowl until thoroughly blended.
  9. Drop dollups of topping over the batter.
  10. Spread it around with a spoon.
  11. Bake for 25 to 30 minutes or until wooden pick inserted in center comes out clean.
  12. Cool completely in pan on wire rack.
  13. Slice into mini bars.
  14. Store in covered container in refrigerator.
