Vegetarian split pea soup recipe. It’s so simple, you can’t mess this recipe up!
Ingredients:
- 8 ounces dry yellow split peas, rinsed
- 2 3/4 cups water
- 1 cup diced firm tofu
- 1 chopped onion
- 1 chopped carrot
- 1 bay leaf
- 2 tsp. dried parsley flakes
- 1/2 tsp. dried basil
Directions:
- Combine all ingredients in a medium pot.
- Cook on low over medium heat for 45 minutes to 1 hour.
- Serve and enjoy!
- Salt and Pepper to taste.
