Pumpkin Fritters

Ingredients
- 1½ cups shredded pumpkin
- 2 cups buttermilk
- 3 eggs, whisked
- 1 tsp. salt
- 1½ cups flour
- 2 tsp. baking powder
- oil for frying
- confectioners' sugar for garnish
Instructions
- Whisk together the eggs, milk, pumpkin, salt, flour and baking powder.
- Preheat the oil for frying to approx. 350F.
- Drop heaping spoonfuls of batter into the oil.
- If you aren't using a deep fryer, be sure to fry all sides evenly.
- Should take under 5 minutes.
- Remove from oil and set aside on paper towels to remove excess oil.
- Plate and sprinkle with confectioners' sugar and serve while still warm.
Notes
Serve with a bit of whipped cream for added sweetness!
