Such a simple technique for cooking eggplant, peppers, squash, etc.
- 1 tbsp. olive oil
- 1 tsp. garlic salt
- Preheat the oven to 375F.
- Prick eggplant with fork approx. 20 times.
- Rub with garlic salt and oil.
- Roast on baking sheet for 30-45 minutes depending on the size of the eggplant.
