
tomato bisque
Homemade tomato bisque…nice and creamy. How simple can such a delicious soup be? Serves many!
Ingredients:
- 2 28 oz. cans whole tomatoes
- 4 oz. butter
- 1 cup flour
- 1 cup flour
- 2 cartons chicken broth
- 1/4 cup heavy cream
- 1/4 cup basil, sliced thin
- salt and pepper to taste
- 1 tsp. sugar (optional)
- Parmesan cheese and or croutons(optional)
Directions:
- Slice tomatoes and remove seeds. Puree with the juice in a blender.
- In a large pot, melt the butter and add flour. Whisk this over medium-high heat for about 5 minutes.
- Add chicken broth and bring to a boil, stirring until it thickens.
- Add tomato puree, bring just about to a boil, then simmer for about 30 minutes.
- Add salt, pepper, and optional sugar (all to taste).
- Stir in cream and add basil.
- Garnish with cheese and/or croutons!
