Vanilla Bean Ice Cream

Ingredients
- 2 eggs
- 1 egg yolk
- 1 cup sugar
- ¼ tsp. salt
- 2½ cups whipping cream
- 2 cups half-and-half cream
- 2 tsp. vanilla extract
- 1 vanilla bean stem
Instructions
- Whisk the eggs and set aside.
- Preheat a heavy saucepan over medium heat.
- Cook the eggs, sugar, salt, and both types of cream over medium heat.
- Stir constantly, until the mixture is thick enough to coat a metal spoon.
- Remove from the heat and cool by setting pan in ice and stirring the mixture.
- Cover the chilled pan and refrigerate overnight.
- Pour custard and vanilla into the cylinder of an ice cream freezer.
- Freeze according to the manufacturer's directions.
