My wife made this for lunch today, and I insisted that we share the recipe! It’s sooo good!

Falafel wrap with creamy garlicky cucumber sauce.
Ingredients
  • 3 oz falafel mix (1/2 of the dry ingredients)
  • ⅝ cup water (1/2 of the water)
  • ½ chopped cucumber
  • 1 tsp. dill
  • 2 cloves garlic, pressed or shredded
  • salt to taste
  • 6 oz. plain greek yogurt
  • 2 large wraps/tortillas, warmed
  • lettuce
  • 1 tomato, sliced
Instructions
  1. Prepare the falafel according to packaging instructions. This recipe uses half of the ingredients to make 2 large wraps. Feel free to double it up!
  2. While you wait for the falafel mix to set, combine the yogurt, cucumber, garlic, dill, and salt in a bowl. Mix the sauce, cover and store in the fridge.
  3. Bake or fry the falafel.
  4. Warm the wrap, spread the yogurt sauce over each wrap.
  5. Layer lettuce, tomato, and falafel on top.
  6. Roll up the wrap tightly and serve.
Notes
There will be extra yogurt sauce, so add a little extra on the side for dipping.
