Filipino style egg rolls with ground pork! The first time I tried these, I must have eaten 5!

My friends roommate was from the Philippines and she would make batches of these to feed the neighborhood! They taste almost like a pork meatball stuffed inside of an egg roll!
Ingredients
- 1 tbsp. vegetable oil
- 1 lb. ground pork
- 2 cloves garlic, shredded
- 3-4 chopped scallions or green onions
- ½ cup chopped white onion
- ⅓ cup minced carrots
- ½ cup thinly sliced green cabbage
- 1 tsp. ground black pepper
- 1 tsp. soy sauce (light)
- 1 tsp. garlic salt
- 1 tsp. onion powder
- 30 lumpia wrappers or egg roll wrappers
- 2 cups vegetable oil (or use the deep fryer!)
Instructions
- Brown the pork in an oiled fry pan.
- Remove the pork from the pan and fry the onion and garlic for 2-3 minutes over medium low.
- Stir in the carrots, cabbage, scallions and the cooked pork.
- Add the seasonings and stir well for 2-3 minutes.
- Remove from the heat and set aside.
- Add a couple tbsp. of the meat mixture to the lumpia papers.
- Start at the bottom corner, roll up tightly and fold in the edges.
- Fry in a wok or deep fryer until crispy and golden brown.
I’ve had these before, so when I saw this recipe the other day I had to make a batch! I made about fifteen by cutting the instructions in half. I wish I had made the whole thing. We didn’t have any leftovers and there were 4 of us.
Oh! And they were really good!
