I made a big batch of couscous last night and had about three cups worth of leftovers today. I decided to experiment with a few ideas. Here they are! All enjoyable. 🙂
Ingredients
- WARM COUSCOUS SALAD
- 1 cup prepared couscous
- 1 tbsp. Italian dressing
- ¼ cup chopped cucumber
- 1 tbsp. chopped red onion
- COLD COUSCOUS SALAD
- 2 tbsp. Feta cheese crumbles
- 1 cup prepared couscous
- ¼ cup chopped red pepper slices
- 1 green onion, chopped
- 1 tbsp. salad dressing of your choice
- COUSCOUS SIDE DISH
- 1 cup prepared couscous
- 1 tbsp. extra virgin olive oil
- 1 clove garlic, minced
- 2 baby carrots, finely chopped
- ¼ tsp. sea salt
Instructions
- WARM COUSCOUS SALAD
- Combine 1 cup prepared couscous and the 1 tbsp. Italian dressing and warm in the microwave for 1 minute.
- Mix in the ¼ cup chopped cucumber and the 1 tbsp. chopped red onion.
- Stir and enjoy!
- COLD COUSCOUS SALAD
- Combine all ingredients in a serving bowl.
- Stir well until the salad dressing has circulated.
- COUSCOUS SIDE DISH
- Combine all ingredients in a glass serving bowl.
- Stir well.
- Microwave for 1 minute 30 seconds.
