Here’s a yummy Mexican style rice side dish. Great to go with any Mexican entree.

Mexican rice that you can make using items found in your kitchen!
Ingredients
  • 3 tbsp. canola oil
  • 1 cup uncooked long-grain rice
  • 1 tsp. garlic salt
  • 1 teaspoon ground cumin
  • ½ chopped white onion (small onion)
  • 6 oz. tomato sauce
  • 2 cups chicken broth
Instructions
  1. Add the veggie oil and the rice to a medium sized pan.
  2. Heat over low for 2-3 minutes to get a slight browning to the rice.
  3. Add the onion and stir for 1-2 minutes.
  4. Next, add the chicken broth and bring to a boil.
  5. Add the remaining ingredients, cover and simmer for about 20 minutes or until rice has cooked.
Notes
This recipe serves about 4 helpings, so double up for more people. 🙂
