Here’s a yummy Mexican style rice side dish. Great to go with any Mexican entree.
Simple Mexican Rice

Mexican rice that you can make using items found in your kitchen!
Ingredients
- 3 tbsp. canola oil
- 1 cup uncooked long-grain rice
- 1 tsp. garlic salt
- 1 teaspoon ground cumin
- ½ chopped white onion (small onion)
- 6 oz. tomato sauce
- 2 cups chicken broth
Instructions
- Add the veggie oil and the rice to a medium sized pan.
- Heat over low for 2-3 minutes to get a slight browning to the rice.
- Add the onion and stir for 1-2 minutes.
- Next, add the chicken broth and bring to a boil.
- Add the remaining ingredients, cover and simmer for about 20 minutes or until rice has cooked.
Notes
This recipe serves about 4 helpings, so double up for more people. 🙂
