We're in the midst of a very strict diet of fruits, veggies, nuts and olive oil. After eating soups and salads for the last 4 days, I came up with this recipe for something different with texture!
Ingredients
- 2 small russet potatoes, washed
- ¼ green pepper, chopped
- ¼ onion, chopped
- 2 tbsp. olive oil
- salt and pepper
Instructions
- Shred the potatoes.
- Combine the potatoes with the onion and pepper.
- Salt and pepper the ingredients to your liking.
- Compact the ingredients into a ball and flatten.
- Fry both sides until deep golden brown on both sides.
- We topped with guacamole and salsa.
