I’m part Sicilian, so I thought I should represent a little of Sicilia’s culinary magic with this big pot of stew.

Seafood is a huge part of the Sicilian way of life.
Ingredients
  • 1 lb. fresh fish, cut into cubes (snapper, bass, cod)
  • ¼ lb. calamari, cleaned, and cut into pieces
  • 1 lb. clams, cleaned
  • ½ lb. shrimp, cleaned
  • 1 chopped white onion
  • 2 lemons, juiced
  • ¼ cup fresh chopped parsley
  • 5 cloves garlic, shredded
  • 1 28 oz. can chopped tomatoes
  • 2 cups white wine
  • 1 cup clam juice
  • 2 cups veggie or fish stock
  • 1 tbsp. Italian seasoning
  • 1 tsp. garlic salt or sea salt
  • 1 tsp. cayenne pepper
  • 2 cups water
  • ¼ cup olive oil
  • *Don't forget the crusty bread!
  • * add a few more types of fish and this could be your Feast of the 7 fishes dish!
Instructions
  1. Heat the olive oil in a dutch oven or large pot.
  2. Add the chopped onion.
  3. Cook for 3 minutes, stirring occasionally.
  4. Add the garlic and stir.
  5. Pour in the tomatoes, spices, salt and stir.
  6. Cook for a few minutes.
  7. Add the stock, wine, and clam juice.
  8. Bring to a light boil. Reduce to low and let simmer.
  9. Add the seafood ingredients.
  10. Bring to a simmer.
  11. Add the water and simmer for 10 minutes.
  12. Serve with a lemon wedge and a sprinkling of fresh chopped parsley.
