OK, this recipe was adapted from the Whole Living Challenge. My husband made it for me this morning/Valentine’s Day.
Turmeric Tofu Scramble

Tofu with so much flavor!
Ingredients
- 8 oz. firm tofu, water drained and crumbled by hand
- fresh ginger 1 tsp.
- 2 tbsp. olive oil
- ½ turmeric
- 2-3 cloves garlic
- 2-3 cups fresh spinach
- ¼ cup chopped yellow onion
- finish with sea salt and pepper
Instructions
- Heat oil in a medium sized pan over med. low.
- Add oil, turmeric, garlic and onion to the saute pan and stir.
- Cook for approx. 2 minutes.
- Crumble the tofu over the turmeric mixture.
- Add the spinach.
- Cook until tofu is heated and spinach has wilted.
- Finish with a drizzle of olive oil and sprinkling of sea salt and pepper.
