Had some extra tomatoes lying around, so we whipped this together. Delish!
Glazed Whole Tomatoes Over Penne

Ingredients
- 4 vine tomatoes (medium-large)
- ½ cup balsamic vinegar
- 2 tbsp. olive oil
- 1 tsp. pepper
- 1 tsp. dried or fresh parsley
- 1 garlic clove, shredded
- Parmesan cheese (plenty for topping)
Instructions
- Wash the tomatoes, and set aside.
- Heat a sauce-pan over medium.
- Add the olive oil and the balsamic.
- Place the tomatoes, spread apart from each other.
- Bring to a boil and then reduce to low.
- Simmer until the balsamic has reduced and the tomatoes are tender.
- Top the tomatoes with fresh cracked pepper.
- Prepare the pasta according to packaging.
- Pile the pasta on your plate.
- Top with a whole tomato and drizzle with the balsamic reduction.
- Drizzle with olive oil, cheese, parsley/basil.
