Fresh salmon and creamy avocado are two of my favorite things…Add a toasty bun, and I’m in love.
Salmon Avocado Burger

Living on the New England shoreline, we've always got freshly caught fish/shellfish in our markets. We had some leftover Atlantic salmon in the fridge, so I decided to whip up a nice burger. It was so good, so good, so good with the avocado slathered on top! You can use canned salmon if you're in to that sort of thing. 😉
Ingredients
- approx. 1.5 cups of chilled (previously cooked/grilled) salmon, crumbled
- ¼ red onion, finely diced
- ½ red pepper, finely diced
- 1 tsp. dill
- juice from one lemon
- 3 egg whites
- sea salt to taste
- 1 tbsp. olive oil
- 1 handful of fresh spinach leaves
- 2 tbsp. flour
- 2 rolls or hamburger style buns
- Topping:
- I used guacamole, but here's an easy alternative:
- ½ an avocado
- 1 tbsp. lemon juice
- 1 tbsp. red onion
- sea salt to taste
Instructions
- Mix the crumbled salmon, onion, red pepper, dill, lemon juice, egg whites, and flour in a large bowl.
- Season with salt and pepper.
- Use your hands to shape two burgers.
- Heat a large grill pan or non-stick pan over medium heat and add oil.
- Cook the burgers for 3-4 minutes on each side until browned and crisp on the edges and heated all the way through.
- While burger is cooking, toast the roll/bun and layer the bottom half with spinach. Place cooked salmon burger on top then top with avocado spread/guacamole.
