Cheddar, Jalapeno and Dill Scones

Our Featured Foodie friends over at Teeny Tiny Kitchen created these amazingly tasty scones with jalapeno and cheddar…mmm

Cheddar, Jalapeno and Dill Scones
Serves: 10
  • 2 ½ -3 cups flour
  • 2 tablespoons+ 2 teaspoons of baking powder
  • 1 teaspoon of kosher salt
  • Black pepper
  • 1 cup of half and half
  • 1 egg
  • 1 cup of grated cheddar cheese
  • 3 scallions, white and green parts, finely diced
  • 2 tablespoons of diced pickled jalapenos
  • 1 tablespoon of fresh dill, finely chopped
  • 1 tablespoon of melted unsalted butter
  1. In a large bowl mix together the flour, salt, pepper and baking powder. In a smaller bowl mix together the half and half with the egg. Add the half and half/egg mixture to the larger bowl. Add in the cheese, jalapenos, scallions and dill. Mix the dough together with your hands, until everything is incorporated. Lightly flour a work surface and roll the dough out, so that it's 1-inch thick. Using a 3-inch cookie cutter, bowl, or cup, cut the dough into circles. Place the scones on a cookie sheet and brush with the melted butter. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
