Crab Cake and Avocado Sandwich

Ingredients
1 12 package imitation crab
1 cup bread crumbs plus a few tbsp. reserve bread crumbs
1 tbsp. mayonnaise
1 tsp. yellow mustard
2 eggs
½ cup onion, minced
1 tbsp. fresh chopped parsley or 1 tsp. dried parsley
2 tsp. Old Bay Seasoning
Sandwich Ingredients:
1 avocado, sliced
8 slices of red onion
4 tbsp. tartar sauce, optional
bread of your choice! 8 slices!
Instructions
Preheat a deep fryer to 375F-400F.
Combine all ingredients in a bowl.
Mix well.
Make patties out of the crab mixture,
Dust the patties with reserve bread crumbs.
Fry until deep golden brown.
*If you don't have a deep fryer, you can still make the crab cakes!
Just add 1 cup vegetable oil in a frying pan and heat over medium/high.
Once the crab cakes are crisp and ready to go,
