Baked Flounder in a Pouch!

Easy one pouch dinner option!
  • 2 cups precooked cous cous
  • 4 flounder filets
  • 2 cups shredded squash
  • 1 lemon, cut into slices
  • salt and pepper to taste
  • cooking spray
  • parchment paper (4 large sheets)
  1. Spray the parchment paper with the cooking spray.
  2. Preheat the oven to 400F.
  3. First layer = cous cous (about ½ cup per parchment sheet).
  4. Second layer = shredded or thinly sliced squash (1/2 cup).
  5. rd layer = fish filet.
  6. th layer = lemon slices (about 2 slices each).
  7. Fold the parchment over the top of the fish pile.
  8. Fold in the edges to create an airtight pocket.
